Breakfast for Dinner
After a long week of work it's nice to have a fun and easy meal to bring in the weekend. Breakfast is easily my favourite meal, but I rarely have time to spend the time to make a nice one, so breakfast for dinner is a great alternative. We had a friend come over tonight, so my post didn't make it up until Saturday morning, and my editor took it upon himself to use my blog to shame me, which might make me actually post on time from now on. (See his notes below)
Recipe for Pancakes:
3 Cups Flour (AP)
1 tbsp sugar
½ tsp salt
3 tbsp baking powder
3 eggs
3 tbsp veg oil
3 cups milk

This is one of the best pancake recipes I have have ever had, and I have had a fair few pancakes in my life. Now, to give credit where due, I did steal this recipe from a friend, Dan Miller, who in turn stole it from his grandmother. I have used this recipe to make pancakes for 60 people at a time, and it scales fantastic, and it keeps really well as both batter and leftover cakes.
I am a big fan of breakfast meats, and with a guest coming I had an excuse to go all out. We had pancakes, eggs, bacon, sausage, whipped cream, syrup, and strawberries in sauce*. Everything was delicious, and easy to make, and this will continue to be one of my favourite comfort foods for a long long time.
*Note: A quick easy strawberry sauce can be achieved by simply adding a healthy amount of sugar (to taste) to frozen strawberries (whole or sliced, doesn't matter) and using the DEFROST setting in the microwave for 3-4 minutes. This will get you a beautiful sauce and berries to enjoy on pancakes, waffles, ice cream or whatever you would like

Not sure what's happened to the Omnomnivore tonight, but he doesn't appear to be completing today's post. So I, the Cuisinologist, will talk a little about breakfast for dinner, and a comment of breakfast foods in general.
Breakfast for dinner can take on many different forms. Really if you add eggs to any meal, the law says it is breakfast. But let's assume we are looking at a traditional breakfast meal.
Pancakes, eggs( done however you desire), and a breakfast meat, ie; bacon*, sausage, and/or ham.
* Side Note: I will start with a disclaimer. The views of the editor may not be the views of the Omnomnivore. Bacon is made from PIG. That's it. Pig, not Turkey, or chicken, or some soy product. Understood? Anything else will be henceforth referred to as fakon. Anyone that tries to convince you otherwise does not love you and does not have your best interests in mind.
Anyways, Pancakes! Who doesn't love pancakes. So many different ways to make them. But let's stick to the traditional fluffy skillet pancake. The nice thing about the dinner pancake is that you are more likely to be open to savoury flavours. So be creative with a sauce instead of syrup.
For example
Roast some halved cherry tomatoes with a SMALL amount of garlic
Toss with minced basil, balsamic vinegar, and cottage cheese.
Garnish with torn fresh spinach, and a drizzle of a good olive oil.
All these flavours still go well with the pancake and would be complemented by a soft basted or easy over egg or two.
If you however, want to stick with a sweet breakfast for your dinner, you still have a world of options to go beyond the basic syrup.
With a good quality maple syrup, heat on low with a little butter, small diced peeled apple, cinnamon, and nutmeg. Allow to simmer until apples soften. Great for pancakes or french toast. Also would be great if you got a little on some sagey pork sausage.

I'm so glad to see that this recipe has been corrected, I shall attempt again with hopes for better results.
