Holiday Weekend Chocolate Cake
Cake
Ingredients:
2 cups white sugar
1 3/4 cups all-purpose flour
3/4 cup unsweetened cocoa powder
1 1/2 teaspoons baking powder
1 1/2 teaspoons baking soda
1 teaspoon salt
2 eggs
1 cup milk
1/2 cup vegetable oil
2 teaspoons vanilla extract
1 cup boiling water
1 3/4 cups all-purpose flour

Directions:
Preheat oven to 350
Grease and flour two nine inch round pans
Mix all ingredients in the order listed, mixing for 2 minutes before adding boiling water
Bake 30 to 35 minutes, until the cake tests done with a toothpick
Cool in the pans for 10 minutes, then remove to a wire rack to cool completely.
Chocolate FrostingPreheat oven to 350
Grease and flour two nine inch round pans

1/3 Cup Half-and-Half or Milk
1 ½ Tsp Vanilla
½ Cup Cocoa Powder

Directions:
Keep butter cold, add Icing sugar and blend by hand (fork or beater)
Add cocoa powder and mix well
Add vanilla and milk
Mix by hand until safe to use mixer Beat on high until fluffy and smooth
*Note: Can add or subtract ¼ cup Cocoa powder to make more or less chocolaty

This chocolate cake is really easy, requiring only 1 bowl for the cake, and 1 bowl for the frosting. I make the frosting right before I need it, making it ahead and keeping in the fridge will require you to microwave for a few seconds in order to have it spreadable.
My wife loves chocolate, and this is a great cake I can make to satisfy her cravings. It keeps well for a few days, and would be good for guests.
