Asian Lettuce Wraps




Ingredients: 
1 onion diced
3 large carrots shredded
1/3(ish) cup hoisin sauce
A splash of soy sauce
A splash of rice vinegar
A pinch of pepper flakes (or sriracha sauce)
A splash of olive oil
A splash of sesame oil
A pound or two of ground beef


A head of leafy lettuce.


Directions:


Using a food processor, shred the onion and carrot. Transfer to a pan and sauté with a bit of olive oil until onions are translucent and the carrots are tender. Season with salt.


Meanwhile, brown the ground beef (drain if necessary). Add a bit of sesame oil for flavor. Add 1/3 cup of hoisin sauce, and a splash of rice vinegar and soy sauce. Add something for heat (I used pepper flakes, but siracha would be more authentic). Add salt and pepper. Stir in the onion/carrot mixture and continue to simmer. Taste and add more of certain ingredients as needed.


Wash and separate lettuce leaves. Serve meat mixture on individual leaves. Roll and eat!

Editor's Note:  As I am also embracing my said not-so-inner redneck, I commend the initiative, and appreciate that, for a change, I don't have to worry about all the grammar mistakes I usually am watching for. The food sounds great, will have to try this one myself.


I hadn't made this one in a while, and I'm not sure why--- because this meal is easy, quick, and DELICIOUS! Not suggested as a first-date meal though, as this one is impossible to eat with any ounce of dignity. This meal requires mastering "The Claw" as you grasp the unwieldy lettuce wraps and attempt to shovel it into your mouth before the whole thing falls apart.


But! What this meal lacks in class, it makes up for in pure guilt-free flavor! No carbs in this meal! So dig in!


The mixture has a satisfying tangy-sweet flavor and the lettuce gives it a satisfying crunch. The Omnomnivore and I were brainstorming alternate ways to present this meal. I believe this meal could be altered to be served over rice or noodles. It could also be served as a finger-food bite on endive leaves. Any way you dish it up, this meal is sure to get a thumbs-up from your dinner crowd!
