Tomato Cheese Sandwich

Open face cheese and tomato sandwich

Ingredients:

Rye bread
Tomato
Cheddar cheese
Balsamic vinegar
Basil

Directions:

Lightly toast bread
Slice tomato
Layer tomato slices on toast
Drizzle with balsamic
Sprinkle with basil salt and pepper
Top with sliced cheese
Broil until melted

Tonight my wife was at a party and we had a late lunch so I wasn't very hungry. I didn't have much around the house as tomorrow is grocery day. Normally I would go right to boiled eggs but we didn't have any eggs. So, I went for another childhood favourite: cheese and tomatoes on toast. I can remember dad making a version of this when I was a kid, but I have since started making it a bit different.

When I first got married this was something I could easily make for a late night snack. I started adding dehydrated basil on top of the tomatoes, more recently I have added a drizzle of high quality balsamic to bring out the flavours and give an extra kick. This is a go to snack and sometimes a meal for me now and can have many variations. I can add bacon and/or an egg, I can add avocado, or roast garlic, and different cheeses are always interesting to try.

Editor's Note:  Add a drizzle of olive oil with your balsamic. Also some rough ground black pepper and flaked kosher salt on your tomatoes. If you have some fresh basil to put on, that much better, but I do understand this is meant to be a quick simple recipe with what's around the house. That being said: grow some fresh herbs!  


Tonight was a basic version, with limited options, but a great place to start if you have never tried it's like before.
