Stuffed pork loin

Ingredients:
Pork tenderloin
3 cups spinach
Bacon bits
1/4 onion
Olive oil
Cream cheese

Directions:

Soften onion in olive oil
Add bacon bits and cook for a few more minutes
Remove and set aside
In same pan wilt spinach
Add back bacon and onions and mix, add salt and pepper
Butterfly pork tenderloin
Spread stuffing mix evenly
Slice cream cheese and top stuffing
Wrap tenderloin around stuffing and tie
Bake for 35 minutes at 350

This was a new recipe, my wife suggested stuffing a tenderloin and thought spinach dip was a good thing to stuff with, so this was the result. It might be intimidating to try, but a couple of attempts at butterflying a loin and you will be able to show off your skills to guests or girlfriends.

I was very impressed with how this turned out. I probably put a bit too much cream cheese in it, but was still very, very good. I used bacon bits instead of raw bacon because I always have some good ones on hand. I could have wrapped the whole thing in bacon for an added touch, though it would have added some time to the cooking.
