Hummus
Ingredients:
1/4 cup tahini (sesame paste)
1/4 cup lemon juice
1 18 ounce can of chickpeas, drained and rinsed
2 tbsp olive oil
1 clove garlic
1/2 tsp salt
1/2 tsp cumin
1/4 cup water
Directions:
Using a food processor*, mix lemon juice and tahini for about 1 min
Add oil, garlic, salt, and cumin, mix for about 1 min
Add half the can of chickpeas, mix 1 min
Add other half, mix 2 min
Use water, adding a bit at a time to make proper consistency for your taste
Serve with garnish of olive oil and paprika
Make sure to scrape the sides and bottom often to ensure proper mixing and blending.
*NOTE: This can be done in a blender, but I don't recommend it, as it is much harder to get the proper consistency and texture.

Tonight was a lazy night, I didn’t have anyone at home to cook for, and I wasn't all that hungry, so I just made some hummus and snacked for the evening. We had bought some naan from the store a while back and it was in the freezer. I warmed it in the oven at 225 F for about 4 minutes, and it worked very well as a dipping vessel for the hummus.
I never used to be a fan of hummus, mostly because I had only ever had store bought stuff that had poor texture and always seemed to have way too much garlic. It wasn't until I tried some fresh made stuff at a local restaurant that I realized that I actually liked it! My wife has made it several times now, and has even tried her hand at fresh pita and homemade naan. Hummus has now become one of my favourite dips, and it goes really well with a lot of vegetables and bread-like things.
Editor's Note: Also serves as a great accompaniment to properly seasoned Mediterranean meat dishes.
Tonight was my first try making hummus myself, as it is usually my wife who makes it. I think I did pretty well, it turned out well, but I didn't have anything laying around that would have made a great flavour additive. I always have lots of garlic on hand, but I find that can too easily overpower the other flavours of the hummus, something along the lines of red pepper, or sun dried tomatoes and basil, or even artichokes would have stepped things up a bit. I was overall very happy with the turnout though, and will have enough left over to enjoy for a few days.

P.S The last time I had a big BBQ party, the next morning there was leftover homemade pita, hummus, some greek salad and some Tri-tip sirloin. I made a greek pita pizza, it was amazing. I just wanted to share that I made it, and ate it, and would do so again. That is all.
