Stamppot

Stamppot

Ingredients:

2 lbs Potatoes
2/3 Jar of Kale
2-3 Farmer's Sausages
Butter
Milk
White Vinegar

Directions:

Boil potatoes and make mashed potatoes as normal, go a little lighter with the milk and butter than normal
sauté sausage and kale with a fair bit of vinegar
mix everything together and serve

*NOTE: The only place I can find canned Kale, in a jar, is from Save-on-Foods, the brand is HAK, and it is in the canned vegetable aisle. If you find it anywhere else please let me know!

This was a dish that was introduced to me the first time I met my wife's parents. We were just starting to date then, and I of course wanted to make a good impression. It didn't look good at all to me, being all green potatoes and what-not, but it turned out to actually be really good. This dish is one of my wife’s favourite comfort foods and it's really quick and easy to make

Stamppot in my family is just referred to as “Kale”, Stamppot is pretty much potatoes with some sort of green veg and sausage, it doesn't have to be kale, or farmer's sausage, it can be almost anything you want. It is an interesting dish because of the vinegar, it brings out the flavours and seasoning while adding a punch without being overpowering. The first several times we made this on our own we under-vinegared it, and it wasn't bad, but it definitely was missing something. It it's not tasting good enough, add more vinegar, trust me, it's worth it.

Tonight’s was a success as usual, and there are always lots of leftovers for lunch, plus the baby loves it, and it can be frozen, but not without fairly serious texture issues.
